Traditional Goulash

Ingredients
2 lbs beef chuck, cut into 1-inch cubes
2 tbsp vegetable oil
2 onions, finely chopped
3 cloves garlic, minced
2 tbsp sweet paprika
1 tsp caraway seeds, crushed
1/4 cup tomato paste
1 cup beef broth
1 cup water
3 potatoes, peeled and diced
2 bell peppers, sliced
Salt and pepper to taste
2 tbsp parsley, chopped
Instructions
1. Heat oil in a large pot over medium heat. Add onions and garlic, sauté until soft.
2. Add beef and brown on all sides.
3. Stir in paprika, caraway seeds, and tomato paste, cooking for 1 minute.
4. Add beef broth and water, bring to a simmer.
5. Cover and cook for 1.5 hours, stirring occasionally.
6. Add potatoes and bell peppers, cook for another 30 minutes until vegetables are tender.
7. Season with salt and pepper, garnish with parsley before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stove over low heat until warmed through.
