Traditional Enchilada Casserole

Ingredients
1 lb ground beef
1 onion, chopped
2 cups red enchilada sauce
2 cups shredded cheddar cheese
2 cups shredded Monterey Jack cheese
12 corn tortillas
1 cup black beans, drained and rinsed
1/2 cup sliced black olives
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped fresh cilantro
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a skillet over medium heat, cook the ground beef and onion until the beef is browned and the onion is soft.
3. Stir in cumin, chili powder, garlic powder, salt, and pepper. Cook for another 2 minutes.
4. Add black beans to the mixture and stir to combine.
5. Spread a small amount of enchilada sauce at the bottom of a 9x13 inch baking dish.
6. Layer 4 tortillas over the sauce, then add half of the beef mixture, and sprinkle with 1 cup of cheddar cheese and 1 cup of Monterey Jack cheese.
7. Pour 1/2 cup of enchilada sauce over the cheese layer.
8. Repeat the layering process with the remaining tortillas, beef mixture, and cheeses, finishing with a layer of cheese on top.
9. Top with sliced black olives.
10. Bake uncovered in the preheated oven for 25-30 minutes or until bubbly and the cheese is melted and slightly golden.
11. Garnish with fresh cilantro before serving.
Storage
Store leftover enchilada casserole in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, cover the casserole with foil and bake in a preheated oven at 350°F (175°C) for 15-20 minutes or until heated through.
