Traditional Elote Salad

Ingredients

4 ears fresh corn
1/2 cup mayonnaise
1/2 cup crumbled cotija cheese
1/4 cup chopped cilantro
1 lime, juiced
1 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup diced red onion
1 jalapeño, seeded and minced
1 tablespoon vegetable oil

Instructions

1. Preheat a grill to medium-high heat.
2. Husk the corn and brush with vegetable oil.
3. Grill the corn for about 10 minutes, turning occasionally, until charred and tender.
4. Remove the corn from the grill and let cool slightly before cutting the kernels off the cob.
5. In a large bowl, combine the mayonnaise, cotija cheese, cilantro, lime juice, chili powder, salt, and black pepper.
6. Add the grilled corn, diced red onion, and minced jalapeño to the bowl and mix until well coated.
7. Serve immediately or refrigerate for up to 2 hours before serving.

Storage

Store in an airtight container in the refrigerator for up to 2 days.

Reheating

Reheat in a skillet over medium heat for 3-4 minutes, stirring occasionally, until warmed through.
