Ingredients
2 cups elbow macaroni
1 cup mayonnaise
1/4 cup apple cider vinegar
1 tablespoon Dijon mustard
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup diced celery
1/2 cup diced red bell pepper
1/4 cup diced red onion
2 tablespoons chopped parsley
Instructions
1. Cook macaroni in a large pot of boiling salted water according to package instructions until al dente, then drain and rinse with cold water.
2. In a large bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and black pepper until smooth.
3. Add the cooked macaroni, diced celery, red bell pepper, red onion, and chopped parsley to the dressing and mix until well combined.
4. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld.
5. Serve chilled, garnished with extra parsley if desired.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, allow the salad to come to room temperature or enjoy cold. Reheating is not recommended as it is traditionally served chilled.
