Traditional Dry Brine Turkey
A savory dry brine that infuses turkey with moisture and a blend of classic herbs, yielding a flavorful and succulent centerpiece for any festive gathering.

Ingredients
1 whole turkey (12-14 lbs)
1/2 cup kosher salt
1 tablespoon brown sugar
1 tablespoon fresh cracked black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried sage
Instructions
1. Pat the turkey dry with paper towels and place on a large rimmed baking sheet.
2. In a small bowl, mix together kosher salt, brown sugar, black pepper, garlic powder, onion powder, thyme, rosemary, and sage.
3. Rub the mixture generously over the entire surface of the turkey, including under the skin where possible.
4. Allow the turkey to dry brine uncovered in the refrigerator for at least 24 to 36 hours.
5. Before roasting, rinse the turkey under cold water to remove excess salt mixture and pat dry thoroughly.
6. Roast according to your favorite method until fully cooked and golden brown.
Storage
Store any leftover turkey in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat leftover turkey in a 350°F oven until warmed through, about 20-30 minutes. Alternatively, microwave small portions for 1-2 minutes.
