Ingredients
1 cup of long-grain white rice
4 cups of whole milk
1/2 cup of granulated sugar
1/4 teaspoon of salt
1 teaspoon of vanilla extract
1/4 teaspoon of ground nutmeg
1 tablespoon of unsalted butter
1/4 cup of raisins (optional)
Instructions
1. Rinse the rice thoroughly under cold water until the water runs clear.
2. In a large saucepan, combine the rice, milk, sugar, and salt.
3. Bring the mixture to a gentle boil over medium heat, stirring occasionally.
4. Reduce the heat to low, cover, and simmer for about 50 minutes, stirring every 10 minutes until the rice is tender and the mixture is thickened.
5. Stir in the vanilla extract, nutmeg, and butter. Add raisins if desired.
6. Remove from heat and let cool for a few minutes before serving.
Storage
Store leftover rice pudding in an airtight container in the refrigerator for up to 3 days.

To reheat, place the rice pudding in a saucepan and warm over low heat, adding a splash of milk to maintain creaminess.
