Traditional Cream of Celery Soup

Ingredients

2 tablespoons unsalted butter
1 medium onion, chopped
4 cups chopped celery
2 tablespoons all-purpose flour
3 cups chicken broth
1 cup whole milk
1/2 teaspoon salt
1/4 teaspoon ground white pepper
1/4 teaspoon dried thyme
1/4 teaspoon celery seed

Instructions

1. Melt the butter in a large pot over medium heat.
2. Add the chopped onion and celery; cook until the vegetables are tender, about 10 minutes.
3. Stir in the flour until well combined.
4. Gradually add the chicken broth, stirring continuously to avoid lumps.
5. Bring the mixture to a simmer and cook for about 20 minutes.
6. Using an immersion blender or a countertop blender, blend the soup until smooth.
7. Return the soup to the pot, add milk, salt, white pepper, thyme, and celery seed.
8. Simmer gently for an additional 10 minutes, stirring occasionally.
9. Adjust seasoning to taste before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently over medium heat on the stove, stirring occasionally until heated through.
