Ingredients
1 cup sweetened shredded coconut
2/3 cup granulated sugar
2 large egg whites
1 tsp vanilla extract
1/4 tsp salt
Instructions
1. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, combine shredded coconut and granulated sugar.
3. In a separate bowl, whisk the egg whites, vanilla extract, and salt until foamy.
4. Gently fold the egg white mixture into the coconut mixture until well combined.
5. Using a tablespoon, scoop small mounds of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.
6. Bake for 18-20 minutes, or until the edges are golden brown and the tops are lightly toasted.
7. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Storage
Store in an airtight container at room temperature for up to 5 days.
Reheating
Reheat gently in a preheated oven at 300°F (150°C) for 5 minutes for a freshly baked texture.
