Traditional Coconut Custard Pie

Ingredients

1 pre-made 9-inch pie crust
1 cup granulated sugar
1/2 cup all-purpose flour
1/4 teaspoon salt
2 cups whole milk
1 cup coconut milk
3 large eggs
1 teaspoon vanilla extract
1 cup sweetened shredded coconut
2 tablespoons unsalted butter, melted

Instructions

1. Preheat your oven to 350°F (175°C).
2. In a large mixing bowl, combine sugar, flour, and salt.
3. Gradually whisk in whole milk and coconut milk until smooth.
4. Beat eggs in a separate bowl, then add to the milk mixture along with vanilla extract.
5. Stir in melted butter and shredded coconut.
6. Pour the mixture into the pre-made pie crust, spreading it evenly.
7. Bake in the preheated oven for 45-50 minutes, or until the custard is set and the top is lightly golden.
8. Remove from the oven and let cool completely on a wire rack before serving.

Storage

Store the pie in the refrigerator covered with plastic wrap for up to 3 days.
