Ingredients
1 tablespoon olive oil
1 medium onion, chopped
3 cloves garlic, minced
1 jalapeño, seeded and minced
4 cups chicken broth
1 can (14.5 ounces) diced tomatoes
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups cooked shredded chicken
1 cup corn kernels
1 tablespoon lime juice
1/4 cup fresh cilantro, chopped
8 corn tortillas, cut into strips
1 avocado, diced
1 cup shredded cheese
sour cream, for serving
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion, garlic, and jalapeño, sauté until onion is translucent, about 5 minutes.
3. Stir in chicken broth, diced tomatoes, cumin, chili powder, salt, and black pepper. Bring to a boil.
4. Reduce heat to low, add shredded chicken and corn, simmer for 15 minutes.
5. Stir in lime juice and fresh cilantro.
6. In a separate pan, heat a small amount of oil and fry tortilla strips until crispy.
7. Serve soup hot, garnished with avocado, cheese, tortilla strips, and a dollop of sour cream.
Storage
Refrigerate in an airtight container for up to 3 days.
Reheating
Reheat gently on the stove over medium heat until warm. Add additional broth if necessary.
