Traditional Chicken Quesadilla

Ingredients
1 lb boneless, skinless chicken breast
1 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp ground cumin
1/2 tsp garlic powder
2 cups shredded Monterey Jack cheese
4 large flour tortillas
1/4 cup chopped fresh cilantro
1/2 cup diced onions
1/2 cup diced red bell pepper
1 lime, cut into wedges
Instructions
1. Preheat skillet over medium-high heat and add olive oil.
2. Season the chicken breasts with salt, pepper, cumin, and garlic powder.
3. Cook chicken in the skillet for 5-7 minutes on each side until fully cooked.
4. Remove chicken from heat and let rest for 5 minutes before shredding.
5. Place a tortilla in the skillet over medium heat and sprinkle half with cheese.
6. Add shredded chicken, cilantro, onions, and bell pepper on top of the cheese.
7. Fold the tortilla in half and cook until golden brown, about 3 minutes per side.
8. Repeat with remaining tortillas and serve with lime wedges.
Storage
Store leftover quesadillas in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat quesadillas in a skillet over medium heat for 2-3 minutes on each side until heated through.
