Traditional Chicken Fricassee

Ingredients

3 lbs whole chicken, cut into pieces
2 tablespoons unsalted butter
2 tablespoons olive oil
1 large onion, finely chopped
2 cloves garlic, minced
1 cup carrots, diced
1 cup celery, diced
1/2 cup all-purpose flour
2 cups chicken stock
1 cup dry white wine
1 teaspoon dried thyme
1 bay leaf
1 cup heavy cream
Salt to taste
Black pepper to taste
2 tablespoons parsley, chopped for garnish

Instructions

1. Season chicken pieces with salt and pepper.
2. Heat butter and olive oil in a large skillet over medium-high heat.
3. Brown chicken pieces on all sides, then remove and set aside.
4. In the same skillet, add onion and garlic, sauté until translucent.
5. Stir in carrots and celery, cook until slightly soft.
6. Sprinkle flour over vegetables, stir to coat evenly.
7. Gradually add chicken stock and white wine, stirring constantly until smooth.
8. Return chicken to skillet, add thyme and bay leaf, cover and simmer for 35-40 minutes.
9. Remove bay leaf, stir in heavy cream and heat through.
10. Garnish with chopped parsley before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stove over low heat, adding a splash of chicken stock if needed to prevent drying.
