Traditional Chicken Croquettes

Ingredients
2 cups cooked chicken, finely chopped
1 cup breadcrumbs
1/2 cup milk
1/4 cup all-purpose flour
1/4 cup unsalted butter
1/4 cup onion, finely chopped
2 tablespoons fresh parsley, chopped
2 large eggs
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon nutmeg
Vegetable oil for frying
Instructions
1. In a pan, melt butter over medium heat and sauté onions until translucent.
2. Stir in flour and cook for 1-2 minutes.
3. Gradually whisk in milk, stirring until thickened.
4. Add chopped chicken, parsley, salt, pepper, and nutmeg. Mix well.
5. Remove from heat and let the mixture cool slightly.
6. Shape the mixture into small patties or oval croquettes.
7. Beat the eggs in a shallow bowl and place breadcrumbs in another bowl.
8. Dip each croquette in beaten eggs, then coat with breadcrumbs.
9. In a skillet, heat vegetable oil over medium-high heat.
10. Fry croquettes until golden brown and crispy on all sides.
11. Drain on paper towels before serving.
Storage
Store leftover croquettes in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F for 10-15 minutes until heated through.
