Ingredients
2 tablespoons unsalted butter
1 pound boneless, skinless chicken breast, thinly sliced
Salt and pepper to taste
1 pound fettuccine pasta
1 cup heavy cream
1 cup freshly grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon olive oil
Chopped parsley for garnish
Instructions
1. Melt 1 tablespoon of butter in a large skillet over medium heat. Season the chicken with salt and pepper, and add to the skillet.
2. Cook the chicken for 6-8 minutes, or until golden and cooked through. Remove from skillet and set aside.
3. Cook the fettuccine according to package instructions. Drain and set aside.
4. In the same skillet, add remaining butter and olive oil. Sauté garlic until fragrant, about 1 minute.
5. Stir in cream and bring to a gentle simmer. Add Parmesan cheese, stirring continuously until sauce is smooth and thickened.
6. Return the chicken to the skillet, and add the cooked fettuccine. Toss to coat with the Alfredo sauce.
7. Garnish with chopped parsley and serve immediately.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stove over low heat, adding a splash of milk or cream to loosen the sauce.
