Ingredients
2 lbs beef chuck roast, cut into 1-inch cubes
2 tbsp vegetable oil
1 large onion, chopped
3 cloves garlic, minced
1 large green bell pepper, chopped
1 large red bell pepper, chopped
2 cups beef broth
1 cup diced tomatoes
1 tsp ground cumin
1 tsp chili powder
1/2 tsp ground black pepper
1/2 tsp salt
2 tbsp all-purpose flour
1/4 cup fresh cilantro, chopped
Instructions
1. Heat the vegetable oil in a large pot over medium heat.
2. Add the beef cubes and brown them on all sides.
3. Remove the beef and set aside.
4. In the same pot, sauté onion, garlic, green and red bell peppers until soft.
5. Stir in the flour and cook for 1 minute.
6. Add the beef back to the pot.
7. Pour in the beef broth and diced tomatoes.
8. Season with cumin, chili powder, black pepper, and salt.
9. Bring to a boil, then reduce to a simmer and cover.
10. Cook for 2 hours or until beef is tender, stirring occasionally.
11. Stir in chopped cilantro before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a saucepan over medium heat until warmed through, adding a splash of water if needed.
