Traditional Cabbage Soup

Ingredients

1 medium head of cabbage
2 tablespoons olive oil
1 large onion, chopped
3 carrots, sliced
3 celery stalks, sliced
2 garlic cloves, minced
8 cups chicken or vegetable broth
1 can (14.5 oz) diced tomatoes
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 bay leaf
1 tablespoon lemon juice
Chopped fresh parsley for garnish

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion, carrots, and celery and sauté until the vegetables are tender, about 5 minutes.
3. Stir in garlic and cook for an additional 1 minute until fragrant.
4. Add the cabbage and sauté until it begins to soften, about 5 minutes.
5. Pour in the broth, diced tomatoes, salt, black pepper, thyme, and bay leaf. Stir to combine.
6. Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 30 minutes.
7. Remove the bay leaf, stir in the lemon juice, and adjust seasoning to taste.
8. Serve hot, garnished with fresh parsley.

Storage

Store in an airtight container in the refrigerator for up to 5 days.

Reheating

Reheat on the stove over medium heat until warmed through, or microwave in a microwave-safe dish until hot.
