Traditional Cabbage Roll Soup

Traditional Cabbage Roll Soup combines the hearty flavors of cabbage rolls into a comforting, warm, and savory soup perfect for cool weather.

Ingredients

1 lb ground beef
1 cup diced onion
2 cloves garlic, minced
4 cups beef broth
2 cups water
1 can (15 oz) tomato sauce
1 can (14.5 oz) diced tomatoes
1/2 cup uncooked white rice
1 small head of cabbage, chopped
2 carrots, sliced
2 tbsp olive oil
1 tbsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/4 cup chopped fresh parsley

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and minced garlic, cooking until onion is translucent.
3. Add ground beef, cooking until browned.
4. Stir in beef broth, water, tomato sauce, and diced tomatoes.
5. Add in uncooked rice, chopped cabbage, and sliced carrots.
6. Season with Worcestershire sauce, salt, black pepper, and paprika.
7. Bring to a boil, then reduce heat and simmer for 45 minutes until rice and vegetables are tender.
8. Garnish with fresh parsley before serving.

Storage

Store the soup in an airtight container in the refrigerator for up to 4 days.

Reheating

Reheat the soup on the stove over medium heat until warmed through, or in the microwave for 2-3 minutes.
