Traditional Beef Short Ribs

Ingredients
4 lbs beef short ribs
Salt and pepper to taste
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
2 cups beef broth
1 cup red wine
2 tbsp tomato paste
2 sprigs fresh thyme
2 sprigs fresh rosemary
2 bay leaves
1 tbsp Worcestershire sauce
Instructions
1. Preheat oven to 325°F.
2. Season ribs with salt and pepper.
3. In a large Dutch oven, heat olive oil over medium-high heat.
4. Sear ribs on all sides until browned, then remove and set aside.
5. In the same pot, add onions and cook until softened.
6. Stir in garlic and cook for another minute.
7. Add beef broth, red wine, tomato paste, thyme, rosemary, bay leaves, and Worcestershire sauce.
8. Return ribs to the pot, ensuring they are submerged in liquid.
9. Cover and transfer to oven; cook for 2.5 to 3 hours or until meat is tender.
10. Remove from oven, discard herbs, and skim fat from the surface before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stovetop over low heat, adding a splash of beef broth if needed to keep moist.
