Tourteau Fromagé is a distinctive cheesecake from the Poitou region of France, celebrated for its striking blackened crust and soft, fluffy interior. This unique dessert is baked at high temperatures, creating a delightful contrast between the outer shell and the creamy filling.

Ingredients

1 lb fresh goat cheese
3/4 cup granulated sugar
1 cup all-purpose flour
1/2 cup unsalted butter, softened
5 large eggs
1/2 tsp salt
1/2 tsp vanilla extract
1 tsp lemon zest
1/4 cup heavy cream

Instructions

1. Preheat the oven to 475°F (245°C) and grease a 9-inch springform pan.
2. In a large bowl, beat the goat cheese and sugar until smooth.
3. Add the eggs one at a time, mixing well after each addition.
4. Stir in the vanilla extract, lemon zest, and heavy cream until fully incorporated.
5. Gradually add the flour and salt, mixing until you have a smooth batter.
6. Pour the batter into the prepared pan and smooth the top.
7. Place the pan on a baking sheet and bake for 10 minutes.
8. Reduce the oven temperature to 350°F (175°C) and continue baking for 30 more minutes until the cake is set and the top is blackened.
9. Allow the cake to cool completely in the pan before removing and serving.

Storage

Store the Tourteau Fromagé in an airtight container in the refrigerator for up to 3 days.

Reheating

Serve cold or allow to come to room temperature for 30 minutes before serving. Reheating is not recommended.
