Timeless Zucchini Bread

Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3/4 cup sugar
1/4 cup brown sugar
3/4 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
2 cups grated zucchini
1/2 cup chopped walnuts (optional)
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
3. In another bowl, beat together the sugar, brown sugar, and vegetable oil until well combined.
4. Add the eggs and vanilla extract to the sugar mixture, beating until smooth.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Fold in the grated zucchini and walnuts, if using.
7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
8. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
9. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Storage
Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
Reheating
To reheat, warm slices in the microwave for 10-15 seconds or in a toaster oven for a crispier texture.
