Timeless Strawberry Delight

A luscious strawberry cake brimming with fresh flavors and a moist texture, perfect for summer gatherings and celebrations.

Ingredients

2 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
1/2 cup unsalted butter, softened
1 cup whole milk
3 large eggs
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
2 cups fresh strawberries, pureed
1/4 cup fresh strawberries, diced
1/2 cup heavy cream, whipped

Instructions

1. Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
2. In a large bowl, cream together the butter and sugar until light and fluffy.
3. Add eggs one at a time, beating well after each addition.
4. Stir in vanilla extract and strawberry puree until well combined.
5. In another bowl, whisk together flour, baking powder, and salt.
6. Gradually add the dry ingredients to the wet mixture, alternating with milk, beginning and ending with flour mixture.
7. Gently fold in diced strawberries.
8. Divide batter evenly between prepared pans and smooth the tops.
9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
10. Let cakes cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
11. Spread whipped cream between the layers and on top of the cake before serving.

Storage

Store the cake in an airtight container in the refrigerator for up to 3 days.

Reheating

Allow the cake to come to room temperature before serving, or gently warm slices in a microwave for 10-15 seconds.
