Timeless Shrimp Pasta Delight

This timeless shrimp pasta salad brings together succulent shrimp, tender pasta, and a medley of crisp vegetables, dressed in a creamy, tangy sauce. Perfect for summer gatherings or a refreshing meal on warm days.

Ingredients

1 lb large shrimp, peeled and deveined
8 oz rotini pasta
1 cup cherry tomatoes, halved
1/2 cup celery, finely chopped
1/4 cup red onion, finely diced
1/4 cup bell pepper, finely diced
1/4 cup mayonnaise
1/4 cup sour cream
2 tbsp lemon juice
1 tbsp fresh dill, chopped
Salt and pepper to taste

Instructions

1. Cook the rotini pasta according to package instructions, drain, and let cool.
2. In a large pot, bring water to a boil and cook the shrimp until pink and opaque, about 3-4 minutes. Drain and let cool.
3. In a large bowl, combine the cooked pasta, shrimp, cherry tomatoes, celery, red onion, and bell pepper.
4. In a separate bowl, mix together the mayonnaise, sour cream, lemon juice, dill, salt, and pepper to create the dressing.
5. Pour the dressing over the pasta and shrimp mixture and toss to combine.
6. Cover and refrigerate the salad for at least 1 hour before serving to allow the flavors to meld.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Enjoy cold or allow to reach room temperature; do not reheat.
