Timeless Shepherd’s Pie

Ingredients
1 lb ground beef
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
2 carrots, diced
1 cup frozen peas
2 tbsp tomato paste
1 cup beef broth
1 tsp Worcestershire sauce
1 tsp thyme
Salt and pepper to taste
4 cups potatoes, peeled and cubed
1/2 cup milk
2 tbsp butter
1/2 tsp salt
Instructions
1. Preheat the oven to 400°F (200°C).
2. In a large pan, heat olive oil over medium heat.
3. Add ground beef and cook until browned, about 5-7 minutes.
4. Stir in onion, garlic, and carrots; cook until softened, about 5 minutes.
5. Add tomato paste, beef broth, Worcestershire sauce, and thyme. Simmer for 10 minutes.
6. Stir in frozen peas and season with salt and pepper.
7. Meanwhile, boil potatoes in salted water until tender, about 15 minutes.
8. Drain and mash potatoes with milk, butter, and salt until smooth.
9. Spread the meat mixture in a baking dish and top with mashed potatoes.
10. Bake in preheated oven for 25 minutes or until the top is golden brown.
11. Let cool slightly before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual portions in the microwave for 2-3 minutes or until heated through. Alternatively, reheat in the oven at 350°F (175°C) for 15-20 minutes.
