Timeless Potato Salad
A delightful and creamy potato salad featuring tender potatoes, crunchy vegetables, and a tangy dressing, perfect for picnics or family gatherings.

Ingredients
4 lbs Russet potatoes
1 1/2 cups mayonnaise
2 tbsp Dijon mustard
1/4 cup apple cider vinegar
1/2 cup finely chopped celery
1/2 cup finely chopped red onion
3 hard-boiled eggs, chopped
Salt to taste
Pepper to taste
Fresh chives for garnish
Instructions
1. Peel the potatoes and cut them into bite-sized pieces.
2. Place potatoes in a large pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes.
3. While the potatoes are cooking, prepare the dressing by mixing mayonnaise, Dijon mustard, and apple cider vinegar in a bowl.
4. Drain the cooked potatoes and let them cool slightly.
5. In a large bowl, combine the potatoes, celery, red onion, and chopped eggs.
6. Pour the dressing over the potato mixture and gently toss to coat everything evenly.
7. Season with salt and pepper to taste.
8. Garnish with fresh chives before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Serve cold. If desired, allow to reach room temperature for 15-20 minutes before serving.
