Ingredients

1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup packed light brown sugar
2 large eggs
1 tsp vanilla extract
1/2 tsp peppermint extract
2 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 1/2 cups mini chocolate chips
1 cup crushed chocolate mint candies

Instructions

1. Preheat oven to 350°F (175°C).
2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
3. Beat in the eggs one at a time, then stir in vanilla and peppermint extracts.
4. In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually blend into the creamed mixture.
5. Fold in chocolate chips and crushed mint candies.
6. Drop rounded tablespoonfuls of dough onto ungreased baking sheets, spacing them 2 inches apart.
7. Bake for 10 to 12 minutes, or until edges are set but centers are still soft.
8. Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
