Timeless Meringue Cookies

Ingredients
4 large egg whites
1 cup granulated sugar
1/4 teaspoon cream of tartar
1 teaspoon vanilla extract
Pinch of salt
Instructions
1. Preheat your oven to 225°F and line a baking sheet with parchment paper.
2. In a large bowl, beat the egg whites with an electric mixer on medium speed until foamy.
3. Add the cream of tartar and salt; continue to beat until soft peaks form.
4. Gradually add the sugar, one tablespoon at a time, beating well after each addition until sugar is fully dissolved.
5. Increase the mixer speed to high, and beat until stiff, glossy peaks form.
6. Gently fold in the vanilla extract.
7. Using a piping bag, pipe small mounds of meringue onto the prepared baking sheet.
8. Bake for 60 minutes, then turn off the oven and let the meringues cool inside the oven for at least 1 hour or until completely dry.
9. Remove from the oven and store in an airtight container.
Storage
Store meringue cookies in an airtight container at room temperature for up to 2 weeks.
Reheating
These cookies are best enjoyed at room temperature and do not require reheating.
