Timeless Lemon Loaf

Ingredients
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
4 large eggs
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup whole milk
1/4 cup fresh lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla extract
1/4 cup powdered sugar (for glaze)
2 tablespoons fresh lemon juice (for glaze)
Instructions
1. Preheat oven to 325°F and grease a 9x5-inch loaf pan.
2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
3. Add the eggs one at a time, beating well after each addition.
4. In a separate bowl, whisk together the flour, baking powder, and salt.
5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
6. Stir in the lemon juice, lemon zest, and vanilla extract until evenly distributed.
7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
8. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
9. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
10. For the glaze, whisk together the powdered sugar and lemon juice until smooth, then drizzle over the cooled loaf.
Storage
Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
Reheating
If refrigerated, allow the loaf to come to room temperature before serving or warm slices in the microwave for 10-15 seconds.
