Timeless Jambalaya

Ingredients

1 pound chicken breast, cubed
1 pound andouille sausage, sliced
1 pound shrimp, peeled and deveined
2 tablespoons olive oil
1 large onion, diced
1 bell pepper, diced
2 stalks celery, diced
3 cloves garlic, minced
1 (14.5 oz) can diced tomatoes
3 cups chicken broth
1.5 cups long grain rice
1 tablespoon Cajun seasoning
1 teaspoon dried thyme
1 teaspoon smoked paprika
Salt and black pepper, to taste
2 green onions, sliced
1/4 cup fresh parsley, chopped

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add chicken and sausage, cook until browned.
3. Remove meats and set aside.
4. In the same pot, add onion, bell pepper, and celery, cook until softened.
5. Stir in garlic, cook for 1 minute.
6. Add tomatoes, chicken broth, rice, Cajun seasoning, thyme, smoked paprika, salt, and pepper. Bring to a boil.
7. Return chicken and sausage to the pot, reduce heat, cover, and simmer for 20 minutes.
8. Stir in shrimp, cover, and cook for an additional 5-7 minutes until shrimp is cooked through.
9. Garnish with green onions and parsley before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a pan over medium heat until heated through, adding a splash of water if needed.
