Ingredients

1 whole chicken (4-5 lbs)
1/4 cup olive oil
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme, chopped
1 lemon, quartered
4 cloves garlic, smashed
1 tsp salt
1 tsp black pepper
1 onion, quartered

Instructions

1. Preheat your oven to 425°F (220°C).
2. Pat the chicken dry with paper towels.
3. In a small bowl, combine olive oil, rosemary, thyme, salt, and black pepper.
4. Rub the mixture all over the chicken, making sure to coat evenly.
5. Stuff the cavity with lemon, garlic, and onion.
6. Place the chicken in a roasting pan, breast side up.
7. Roast for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
8. Let the chicken rest for 10 minutes before carving and serving.

To reheat, preheat the oven to 350°F (175°C) and warm the chicken for 15-20 minutes or until heated through.
