Timeless Chocolate Mousse

Ingredients

4 oz bittersweet chocolate
2 tbsp unsalted butter
2 large eggs, separated
1/4 cup granulated sugar
1/2 tsp vanilla extract
1/2 cup heavy cream

Instructions

1. Melt chocolate and butter over a double boiler, stirring until smooth.
2. Remove from heat and let it cool slightly.
3. Whip egg whites until soft peaks form. Gradually add sugar, beating until stiff peaks form.
4. In a separate bowl, whip cream to soft peaks.
5. Add egg yolks to the chocolate mixture one at a time, mixing well after each addition.
6. Fold in whipped cream gently.
7. Fold egg whites into the chocolate mixture in thirds, being careful not to deflate.
8. Spoon or pipe the mousse into serving dishes.
9. Chill in the refrigerator for at least 2 hours before serving.

Storage

Store in the refrigerator covered with plastic wrap for up to 3 days.

Reheating

Mousse is best enjoyed cold and does not require reheating.
