Timeless Chocolate Choux Cake

A delightful twist on the traditional chocolate éclair, this chocolate choux cake combines layers of airy choux pastry with rich chocolate ganache and creamy filling to create a heavenly dessert.

Ingredients

1 cup water
1/2 cup unsalted butter
1 cup all-purpose flour
4 large eggs
2 cups heavy cream
1/4 cup granulated sugar
1 tsp vanilla extract
8 oz semi-sweet chocolate
1/2 cup milk
1/4 cup butter
Pinch of salt

Instructions

1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a saucepan, bring the water, 1/2 cup butter, and a pinch of salt to a boil.
3. Reduce heat and add flour, stirring vigorously until the mixture forms a ball.
4. Remove from heat and let cool for 5 minutes.
5. Beat in the eggs, one at a time, until smooth.
6. Spoon or pipe the mixture onto the prepared baking sheet into 3-inch rounds.
7. Bake for 25-30 minutes or until puffed and golden brown.
8. Let cool completely on a wire rack.
9. For the filling, whip the heavy cream with sugar and vanilla extract until stiff peaks form.
10. Slice the cooled choux pastry in half and fill with the whipped cream mixture.
11. For the chocolate ganache, heat the milk and 1/4 cup butter until simmering.
12. Pour over the semi-sweet chocolate and stir until smooth.
13. Pour the ganache over the filled choux, allowing it to drip down the sides.
14. Refrigerate for 1 hour before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

For best results, enjoy cold or reheat in a preheated oven at 350°F for 5-7 minutes.
