Timeless Chicken Soup

Ingredients
1 whole chicken (
4 lbs)
8 cups water
2 teaspoons salt
1 teaspoon black pepper
1 bay leaf
4 medium carrots, sliced
3 celery stalks, sliced
1 large onion, chopped
3 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 teaspoon thyme
1 cup egg noodles
Instructions
1. In a large pot, place the chicken and cover with water. Add salt, pepper, and bay leaf.
2. Bring to a boil, then reduce heat and simmer for 1 hour, occasionally skimming off any foam or fat.
3. Remove chicken and let it cool. Once cool, remove the meat from the bones and shred it.
4. Strain the broth to remove solids and return it to the pot.
5. Add carrots, celery, onion, and garlic to the broth. Simmer for 20 minutes until vegetables are tender.
6. Add shredded chicken, parsley, thyme, and noodles. Cook until noodles are tender, about 10 minutes.
7. Adjust seasoning with additional salt and pepper to taste.
Storage
Store in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat in a saucepan over medium heat until hot, stirring occasionally.
