Timeless Celebration Cake

Ingredients

2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 1/2 cups granulated sugar
3 large eggs
1 tablespoon pure vanilla extract
1 cup whole milk
3 cups powdered sugar
1 cup unsalted butter, softened (for frosting)
2 tablespoons heavy cream
1 teaspoon vanilla extract (for frosting)

Instructions

1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
3. In a separate large bowl, beat the butter and sugar until light and fluffy.
4. Add eggs one at a time, beating well after each addition.
5. Mix in the vanilla extract.
6. Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until smooth.
7. Divide the batter evenly between the prepared pans and smooth the tops.
8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
9. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
10. For the frosting, beat the butter until creamy, then gradually add powdered sugar, heavy cream, and vanilla extract, mixing until fluffy.
11. Once cakes are completely cooled, spread frosting between layers and over the top and sides of the cake.

Storage

Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.

Reheating

To reheat, bring to room temperature and enjoy, or briefly microwave slices for 10-15 seconds.
