Timeless Carrot Delight

Ingredients
2 cups all-purpose flour
2 cups grated carrots
1 1/2 cups granulated sugar
1 cup vegetable oil
4 large eggs
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon vanilla extract
1/2 cup chopped walnuts
1/2 cup raisins
1/2 cup unsalted butter, softened
8 ounces cream cheese, softened
4 cups powdered sugar
1 teaspoon vanilla extract
Instructions
1. Preheat the oven to 350°F and grease two 9-inch round cake pans.
2. In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
3. In another bowl, beat together sugar, oil, and eggs until smooth.
4. Gradually add the dry ingredients to the wet, mixing until just combined.
5. Fold in grated carrots, walnuts, and raisins.
6. Divide the batter evenly between the prepared pans.
7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
8. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
9. In a medium bowl, beat butter and cream cheese until smooth.
10. Gradually add powdered sugar and vanilla, beating until fluffy.
11. Spread frosting between the layers and over the top and sides of the cake.
Storage
Store the carrot cake in an airtight container in the refrigerator for up to 5 days.
Reheating
Allow the carrot cake to reach room temperature for about 30 minutes or microwave individual slices for 20-30 seconds.
