Ingredients

2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups granulated sugar
1 cup vegetable oil
4 large eggs
2 teaspoons vanilla extract
3 cups finely grated carrots
1 cup chopped walnuts
1/2 cup raisins
1/2 cup unsweetened applesauce
8 ounces cream cheese
1/2 cup unsalted butter
3 cups powdered sugar
1 teaspoon vanilla extract

Instructions

1. Preheat your oven to 350°F and grease two 9-inch round cake pans.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
3. In a large bowl, beat together the sugar and oil until well combined.
4. Add the eggs one at a time, beating well after each addition.
5. Stir in the vanilla extract.
6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
7. Fold in the grated carrots, walnuts, raisins, and applesauce.
8. Divide the batter evenly between the prepared cake pans.
9. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
10. Allow the cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
11. To make the frosting, beat the cream cheese and butter together until smooth.
12. Gradually add the powdered sugar, beating until fluffy.
13. Stir in the vanilla extract.
14. Once the cakes are completely cool, spread a layer of frosting on top of one cake layer.
15. Place the second layer on top and frost the top and sides of the cake.
16. Decorate with additional walnuts if desired.

Storage

Store in an airtight container in the refrigerator for up to 5 days.

Reheating

Allow the cake to come to room temperature for about 30 minutes before serving.
