Timeless Butternut Squash Soup

A comforting and velvety butternut squash soup that brings warmth and nourishment to your table, perfect for the chilly months.

Ingredients

2 lbs butternut squash, peeled and cubed
1 large onion, chopped
2 cloves garlic, minced
2 tbsp olive oil
4 cups vegetable broth
1 cup heavy cream
1/4 tsp nutmeg
Salt and pepper to taste

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, sautéing until translucent.
3. Add cubed butternut squash and cook for 5 minutes, stirring occasionally.
4. Pour in vegetable broth, bring to a boil, then reduce heat and let simmer until squash is tender, about 20 minutes.
5. Remove from heat, and use an immersion blender to puree until smooth.
6. Stir in heavy cream and nutmeg, then season with salt and pepper to taste.
7. Return to heat and warm through before serving.

Storage

Store in an airtight container in the fridge for up to 3 days.

Reheating

Reheat gently in a saucepan over low heat until warmed through, stirring occasionally.
