Ingredients

4 lbs beef short ribs
Salt and pepper to taste
2 tbsp olive oil
1 large onion, chopped
2 carrots, chopped
2 celery stalks, chopped
3 cloves garlic, minced
2 cups beef broth
1 cup red wine
2 tbsp tomato paste
2 sprigs fresh thyme
2 sprigs fresh rosemary
2 bay leaves

Instructions

1. Preheat your oven to 325°F.
2. Season the short ribs generously with salt and pepper.
3. In a large, oven-proof pot, heat olive oil over medium-high heat.
4. Sear the ribs on all sides until browned, about 8 minutes total.
5. Remove ribs and set aside.
6. In the same pot, add onions, carrots, and celery; cook until softened, about 5 minutes.
7. Add garlic and cook for 1 minute until fragrant.
8. Stir in tomato paste and cook for an additional minute.
9. Pour in red wine, scraping up any browned bits from the bottom of the pot.
10. Let the wine reduce by half, about 5 minutes.
11. Add beef broth, thyme, rosemary, and bay leaves.
12. Return ribs to the pot, ensuring they are submerged in the liquid.
13. Cover and transfer to the oven; braise for 2.5 to 3 hours or until the meat is tender and falling off the bone.
14. Remove the pot from the oven and let it rest for at least 15 minutes before serving.

Storage

Store leftover ribs in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 325°F for 20 minutes or until heated through.
