Three-Bean Mexican Casserole

Ingredients

1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) pinto beans, drained and rinsed
1 cup corn kernels
1 can (14.5 oz) diced tomatoes
1 cup salsa
1 tsp cumin
1 tsp chili powder
1/2 tsp smoked paprika
Salt and pepper to taste
1 1/2 cups shredded cheddar cheese
1/4 cup chopped fresh cilantro
1 lime, cut into wedges

Instructions

1. Preheat your oven to 375°F (190°C).
2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
3. Add the red and green bell peppers to the skillet and cook for another 5 minutes until they start to soften.
4. Stir in the black beans, kidney beans, and pinto beans. Mix well to combine.
5. Add corn, diced tomatoes, and salsa to the skillet, stirring to incorporate.
6. Season with cumin, chili powder, smoked paprika, salt, and pepper. Let the mixture simmer for 10 minutes.
7. Transfer the bean mixture to a 9x13 inch casserole dish. Sprinkle shredded cheddar cheese evenly over the top.
8. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
9. Remove from the oven and let it cool slightly before garnishing with chopped cilantro and serving with lime wedges.

Storage

Store any leftover casserole in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place a portion of the casserole in a microwave-safe dish and heat on medium power for 2–3 minutes or until heated through. Alternatively, reheat in a preheated oven at 350°F (175°C) for about 10 minutes.
