Ingredients
4 boneless, skinless chicken breasts
1 cup mayonnaise
1/2 cup grated Parmesan cheese
1/4 cup lemon juice
1 tablespoon lemon zest
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 teaspoon salt
1/2 cup breadcrumbs
2 tablespoons olive oil
Instructions
1. Preheat the oven to 375°F (190°C). Grease a baking dish.
2. In a bowl, mix mayonnaise, Parmesan, lemon juice, lemon zest, thyme, rosemary, garlic powder, black pepper, and salt.
3. Coat each chicken breast with the mixture and place in the baking dish.
4. In another bowl, combine breadcrumbs and olive oil, then sprinkle over the chicken.
5. Bake for 25-30 minutes or until chicken is cooked through and topping is golden brown.
6. Allow to rest for a few minutes before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat in the oven at 350°F (175°C) for 10-15 minutes or until warmed through.
