Tater Tot Supreme Casserole

Ingredients
1 lb ground beef
2 cups frozen mixed vegetables
1 can (10.5 oz) cream of mushroom soup
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup milk
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/2 tsp black pepper
2 lbs frozen tater tots
2 tbsp olive oil
1/4 cup chopped green onions
1/4 cup chopped fresh parsley
Instructions
1. Preheat oven to 375°F (190°C).
2. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, about 6-7 minutes.
3. Stir in garlic powder, onion powder, salt, and black pepper. Cook for an additional 2 minutes.
4. Add frozen mixed vegetables to the skillet and cook for 3 minutes until slightly tender.
5. In a large bowl, combine cream of mushroom soup, sour cream, and milk. Mix until smooth.
6. Add the soup mixture to the skillet, stirring to combine all ingredients.
7. Transfer the beef and vegetable mixture into a 9x13 inch baking dish.
8. Spread tater tots evenly over the top of the mixture.
9. Bake in preheated oven for 25 minutes.
10. Remove from oven and sprinkle shredded cheddar cheese over the tater tots.
11. Return to oven and bake for an additional 10 minutes until cheese is melted and bubbly.
12. Garnish with chopped green onions and parsley before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F (175°C) for 15-20 minutes or until heated through.
