Ingredients

1 lb ground pork
1 tbsp vegetable oil
1 medium onion, diced
2 cloves garlic, minced
1 inch ginger, grated
1/4 cup soy sauce
2 tbsp hoisin sauce
1 tbsp rice vinegar
2 cups mixed frozen vegetables (peas, carrots, corn)
1/4 tsp black pepper
1/2 tsp salt
1 lb tater tots
1/4 cup green onions, sliced for garnish

Instructions

1. Preheat your oven to 375°F (190°C).
2. In a large skillet, heat vegetable oil over medium heat. Add the onion and sauté until translucent, about 3 minutes.
3. Add garlic and ginger to the skillet, cooking for an additional minute until fragrant.
4. Add ground pork to the skillet, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.
5. Stir in soy sauce, hoisin sauce, and rice vinegar, mixing well with the pork mixture.
6. Add mixed vegetables, black pepper, and salt to the skillet, cooking until heated through, about 3-4 minutes.
7. Transfer the pork and vegetable mixture into a 9x13 inch baking dish, spreading evenly.
8. Arrange the tater tots on top of the mixture in a single layer.
9. Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden and crispy.
10. Garnish with sliced green onions before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place the desired portion in an oven-safe dish and bake at 350°F for 10-15 minutes or until heated through. Alternatively, microwave on high for 2-3 minutes.
