Tarragon Lemon Chicken Salad

Ingredients

2 cups cooked chicken, diced
1/2 cup celery, chopped
1/4 cup red onion, minced
1/2 cup mayonnaise
1 tsp Dijon mustard
1 tbsp fresh lemon juice
1 tsp lemon zest
2 tbsp fresh tarragon, chopped
Salt and pepper to taste

Instructions

1. In a large mixing bowl, combine the diced chicken, celery, and red onion.
2. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, lemon zest, and chopped tarragon until smooth.
3. Pour the dressing over the chicken mixture and toss until evenly coated.
4. Season with salt and pepper to taste.
5. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Storage

Store the chicken salad in an airtight container in the refrigerator for up to 3 days.
