Sweet Potato Spice Cake

Ingredients
1 1/2 cups mashed sweet potatoes
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup brown sugar
1 cup unsalted butter, softened
4 large eggs
1/2 cup whole milk
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
2. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
3. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
4. Mix in the mashed sweet potatoes and vanilla extract.
5. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
6. Alternately add the dry ingredients and milk to the sweet potato mixture, starting and ending with the dry ingredients.
7. Pour the batter into the prepared baking pan and smooth the top.
8. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
9. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Storage
Store the cake in an airtight container at room temperature for up to 3 days or refrigerate for up to one week.
Reheating
To reheat, warm individual slices in the microwave for 15-20 seconds or enjoy at room temperature.
