Ingredients

4 lbs sweet potatoes
1 cup granulated sugar
1/2 cup unsalted butter, melted
1/2 cup milk
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
1 cup pecans, chopped
1 cup brown sugar
1/3 cup all-purpose flour
3 tablespoons unsalted butter, softened

Instructions

1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch casserole dish.
2. Peel and cube the sweet potatoes. Boil them in a large pot of water until tender, about 15 minutes. Drain and mash in a large bowl.
3. Stir in granulated sugar, melted butter, milk, eggs, vanilla extract, and salt. Mix until smooth.
4. Spread the sweet potato mixture into the prepared casserole dish.
5. In a separate bowl, mix the pecans, brown sugar, flour, and softened butter until crumbly. Sprinkle over the sweet potato mixture.
6. Bake in the preheated oven for 30 minutes or until the topping is golden brown and crispy.

Storage

Allow the casserole to cool completely, then cover tightly with aluminum foil or transfer to an airtight container and refrigerate for up to 4 days.

Reheating

Preheat your oven to 350°F (175°C). Place the casserole in an oven-safe dish, cover with foil, and heat for 15-20 minutes until warmed through.
