Sweet Potato Casserole

Ingredients
4 lbs sweet potatoes, peeled and cubed
1/2 cup granulated sugar
2 large eggs
1/3 cup unsalted butter, melted
1/2 cup whole milk
1 tsp vanilla extract
1/4 tsp salt
1/2 cup brown sugar
1/3 cup all-purpose flour
1/3 cup unsalted butter, softened
1 cup chopped pecans
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
2. Boil the sweet potatoes in a large pot of water until tender, about 20 minutes. Drain and transfer to a large mixing bowl.
3. Mash the sweet potatoes using a potato masher or electric mixer until smooth.
4. Add granulated sugar, eggs, melted butter, milk, vanilla extract, and salt to the mashed sweet potatoes. Mix until well combined.
5. Pour the sweet potato mixture into the prepared baking dish and spread evenly.
6. In a separate bowl, mix together brown sugar, all-purpose flour, softened butter, and chopped pecans to form the streusel topping.
7. Sprinkle the streusel evenly over the sweet potato mixture.
8. Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and crispy.
9. Allow to cool slightly before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual portions in the microwave for 1-2 minutes or until heated through, or reheat the entire dish in a 350°F oven for 15-20 minutes.
