Ingredients

1 large sweet potato, peeled and thinly sliced
2 cups arugula
1 pre-made pizza crust
1 tablespoon olive oil
1 cup shredded mozzarella cheese
1/2 cup crumbled feta cheese
1 teaspoon dried thyme
Salt and pepper to taste

Instructions

1. Preheat your oven to 425°F (220°C).
2. Arrange the sweet potato slices on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 15 minutes.
3. Prepare the pizza crust on a pizza stone or baking sheet.
4. Spread the roasted sweet potato slices evenly over the crust.
