Sweet & Smoky Chipotle Sloppy Joes

Ingredients

1 lb ground beef
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1/2 cup ketchup
1/4 cup pineapple juice
2 tbsp Worcestershire sauce
1 tbsp brown sugar
2 tsp chipotle peppers in adobo sauce, minced
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
4 hamburger buns
1/2 cup pineapple chunks, crushed
1/4 cup fresh cilantro, chopped

Instructions

1. Heat olive oil in a skillet over medium heat and sauté onion and garlic until softened.
2. Add ground beef and cook until browned, breaking it apart with a spoon.
3. Stir in ketchup, pineapple juice, Worcestershire sauce, brown sugar, chipotle peppers, smoked paprika, salt, and pepper.
4. Simmer the mixture for 10-15 minutes until thickened.
5. Fold in crushed pineapple and cook for an additional 2 minutes.
6. Toast hamburger buns lightly and spoon the mixture over the bottom halves.
7. Garnish with fresh cilantro and top with the other halves of the buns.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat until warmed through, or microwave for 1-2 minutes.
