Sunshine Orange Drizzle Cake

Ingredients

1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1/2 cup freshly squeezed orange juice
1 tablespoon orange zest
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sour cream
1 cup powdered sugar
2 tablespoons orange juice (for glaze)

Instructions

1. Preheat your oven to 350°F and grease a 9-inch round cake pan.
2. In a large bowl, cream together the sugar and butter until light and fluffy.
3. Add the eggs one at a time, beating well after each addition.
4. Stir in the orange juice and zest.
5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
6. Gradually add the dry ingredients to the wet mixture, alternating with the sour cream, starting and ending with the flour mixture.
7. Pour the batter into the prepared cake pan and smooth the top.
8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
10. For the glaze, mix the powdered sugar with the orange juice until smooth and drizzle over the cooled cake.

Storage

Store the cake in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.

Reheating

To reheat, warm individual slices in the microwave for about 10-15 seconds.
