Ingredients
2 cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup grated carrots
1 cup grated apple
1/2 cup sweetened shredded coconut
1/2 cup crushed pineapple, drained
1/2 cup raisins
1/2 cup chopped walnuts
3 large eggs
1/2 cup vegetable oil
1 teaspoon vanilla extract
1/4 cup orange juice
Instructions
1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
2. In a large bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, and nutmeg.
3. Stir in the grated carrots, grated apple, shredded coconut, crushed pineapple, raisins, and chopped walnuts.
4. In a separate bowl, beat the eggs and mix in the vegetable oil, vanilla extract, and orange juice.
5. Add the wet ingredients to the dry ingredients and mix until just combined.
6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
8. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Storage
Store muffins in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
Reheating
To reheat, microwave muffins on a microwave-safe plate for 15-20 seconds or until warm.
