Sun-Kissed Strawberry Delight Cake

Ingredients

2 cups all-purpose flour
1 1/2 cups granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1/2 cup whole milk
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups fresh strawberries, diced
1/4 cup strawberry jam
1/2 cup heavy cream, whipped
2 tablespoons confectioners' sugar

Instructions

1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
2. In a large bowl, cream together the butter and sugar until light and fluffy.
3. Add the eggs one at a time, beating well after each addition.
4. Stir in the vanilla extract.
5. In a separate bowl, whisk together the flour, baking powder, and salt.
6. Gradually add the dry ingredients to the wet mixture alternately with milk, starting and ending with flour.
7. Gently fold in the diced strawberries.
8. Pour the batter into the prepared cake pan and smooth the top.
9. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
10. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
11. Once cooled, spread a layer of strawberry jam over the top.
12. In a separate bowl, whip the heavy cream with confectioners' sugar until stiff peaks form.
13. Spread or pipe the whipped cream over the jam layer.
14. Garnish with additional fresh strawberries if desired.
15. Slice and serve.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, allow the cake to come to room temperature, or warm a slice in the microwave for 10-15 seconds.
